Weet-Bix Cinnamon Waffles

Weet-bix Cinnamon waffles are an excellent way to warm up your mornings, combining so good and weet-bix fir a more nutritional start to your day

Ingredients

  • 4 Weet-Bix™, crushed
  • 1 1/4 cup wholemeal flour (163 g)
  • 3 tsp baking powder
  • 1/4 tsp bi-carb soda
  • 2 tsp cinnamon
  • 1 3/4 cups So Good™ Almond Milk Unsweetened, or So Good™ Soy Lite Milk
  • 2 eggs, whisked
  • 2 tsp maple syrup
  • 2 Tbsp olive oil

For Topping

  • 2 cups berries + 1 Tbsp maple syrup
  • 4 Tbsp low fat yoghurt

Method

  1. Combine fruit and syrup for the topping, and set aside to macerate.
  2. Place Weet-Bix, flour, baking powder, bi-carb soda, and cinnamon in a large bowl. Whisk to combine, and make a well in the centre.
  3. Add So Good milk, eggs, syrup, and oil to the dry ingredients. Whisk well, then set aside for 5 minutes to thicken.
  4. Scoop portions of batter into your waffle iron and cook until golden.
  5. Serve with fruit and yoghurt.

Tips

Replace berries with diced fresh fruit of your choice.
