Hazelnut nice cream

A creamy nice cream perfect for a healthy snack or dessert. A great alternative to your favourite hazelnut ice cream.

Ingredients

1/2 cup hazelnuts
3 large frozen bananas, chopped
1/2 cup So Good™ Almond Milk Unsweetened


 

Method

  1. Put hazelnuts on an oven tray and roast in a hot oven, 200oC, for 10 minutes or until skins darken and have started to crack.
  2. Place hazelnuts in a clean tea towel and rub together to remove skins. Cool.
  3. Place cold hazelnuts and remaining ingredients into a food processor and process until smooth and creamy.
  4. Serve topped with toppers of choice. Serves 4.

Tips

  • Be careful when roasting hazelnuts as they will burn very quickly
  • Remove the hazelnut skins as they can have a bitter taste once roasted
  • As bananas become over ripe, peel and place in the freezer. Frozen banana gives nice cream its smooth creamy texture.
