Crispy Popcorn Cauliflower Bites
Golden, crunchy, and packed with flavour! These Crispy Popcorn Cauliflower Bites are a smoky, spicy snack or side dish that’s perfect for sharing. Coated in a delicious Weet-Bix crumb, they’re a plant-based crowd-pleaser you’ll make again and again!
Ingredients
- 1 small cauliflower or ½ large cauliflower
- ½ cup wholemeal flour
- ½ cup white flour
- 1 cup So Good Almond Milk, Unsweetened + extra
- 6 Weet-Bix, crushed
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional)
- salt and pepper, to taste
Method
- Preheat your oven to 190°C and line a large baking tray with baking paper.
- Cut the cauliflower into bite size florets.
- Mix together the flours and almond milk in a large bowl to form a thick batter. Add more almond milk if needed to get the right consistency for a batter.
- Add the cauliflower florets and mix well to make sure each piece is evenly coated.
- In another bowl, mix together the crushed Weet-Bix, smoked paprika, garlic powder, onion powder, cayenne pepper and season generously with salt and pepper.
- Dip each piece of battered cauliflower into the crushed Weet-Bix mixture to coat and place on the lined baking tray.
- Bake for 45-50 minutes, flipping halfway through or until golden brown and cooked through.
- Serve immediately with your favourite dipping sauce or make it a meal and serve alongside rice and your favourite veggies.
