Chocolate date cake

Indulge your sweet tooth with this healthy pleasure! Chocolate date cake is great enjoyed as an afternoon treat, with your favourite hot drink, or a yummy dessert to complete any meal. This cake is dairy free and easy to make. It uses a great mix of So Good Regular Soy milk, dates, cocoa and tofu to create a healthy delight that all your friends will marvel over. Who could say no to such a tasty treat?

Ingredients

  • 300g silken firm tofu
  • 1/4 cup honey
  • 1/2 cup brown sugar
  • 1 1/3 cups So Good Regular soy milk
  • 2 1/2 cups self-raising flour
  • 1/2 cup cocoa
  • 1 cup pitted dates, chopped
Frosting
  • 1 cup pitted dates, chopped
  • 1 tbs cocoa
  • 1/2 cup water

Method

  1. Place tofu, honey, brown sugar and So Good Regular in a food processor, blend until smooth.
  2. Sift the flour and cocoa together. Fold the flour, cocoa and dates through tofu mixture, pour into greased and lined 20cm round cake tin.
  3. Bake in a moderate oven, 180°C, for 1 hour or until cake is cooked when tested with skewer.
  4. To prepare chocolate frosting, place dates, cocoa and water in small saucepan. Bring to boil. Reduce heat, simmer covered for 2 minutes.
  5. Blend frosting mixture in a food processor and spread over cool cake.
