Acai chia puddings

These Acai chia puddings are filled with good flavours, omega 3's and fibre. They are super easy and simple to make ready in just 5 mins and is a great meal option for when you're on the run. Whether its breakfast, a snack or a dessert these vegan puddings have got you covered. Made using So Good Almond Milk Unsweetened, they make a great gluten free dairy free option that the whole family will love.

Ingredients

  • 1/2 cup chia seeds
  • 1/2 tsp maple syrup
  • 2 tsp acai powder*
  • 1 tsp vanilla essence
  • 2 cups So Good™ Almond Milk Unsweetened
  • 1/2 cup coconut yoghurt
  • 1/4 cup berries

Method

  1. Combine chia seeds, maple syrup, acai powder, vanilla essence and almond milk in a bowl. Stir until well combined. Refrigerate overnight.
  2. Divide half the chia pudding mixture between two jars. Add layers of yoghurt, berries and remaining chia pudding. Top with fresh berries and coconut flakes.

Tips

  • *Acai powder can be found in some supermarkets and health food stores but is not an essential ingredient and can be omitted from the recipe.
